Yes, we were all Irish....
What to do with leftover corned beef after St. Patrick's Day? Why not a dish of pho?
Well, given that the Vietnamese got the noodles from the Chinese, and the beef was the idea of their former French colonial rulers....all I can say is that it's a wonderful example of cultural appropriation by that country. And delicious, especially with another example of cultural appropriation--Vietnamese iced coffee. Mmm....
